Editing the theme and the portfolio templates is fairly easy: you have the portfolio items and normal pages with options and content. The most important portfolio options are the hero image and captions (title and subtitles). The content can be edited as for normal pages, nothing special about it.
The portfolio page templates do not have to be edited directly: they will automatically display in their specific layout the portfolio items defined in admin -> portfolio
Coming back to your question, try replacing hero demo images for ALL portfolio items with images coming from your domain/media library, on some sites the browser will complain about images coming from a different domain due to a enforced CORS policy.
You can change the hero image in portfolio item options and you can find the original demo images there (imported)
