And I also want to link individual categories to individual showcase style
Yes, hi, you can assign portfolio categories to each portfolio item. and then you can filter any portfolio page template using the portfolio category slug that you can find in page options. Then the portfolio template will display only the portfolio items belonging to that category.

You can install first one of the cache plugins that will first optimize your content (by caching it)
We are using W3 Total Cache in our demos
https://wordpress.org/plugins/w3-total-cache/
Second you should optimize your images for web as mush as possible to make them smaller in size.
For image optimization we have used WSmush
https://wordpress.org/plugins/wp-smushit/
Avoid using lazy loading for images as it will interfere with theme's dynamic effects.
For self hosted videos we advise to store them on a CDN
