I agree with the values of PageSpeed Insights and WordPress, but the scores are really poor. I'm currently using Redis and WP Rocket to optimize my site's performance. Do you think switching to W3 Total Cache could make a significant difference ?

Yes, we believe so. For instance, it will help caching images and other content thus reducing the network latency. Avoid minifying since it may break the theme almost all js libraries are already minified.

We recommend using cache plugin like W3 Total Cache. We used it on our demo sites. Try to optimize as much as possible the images for web.
For speed monitoring we mostly use Network tab in Chrome, you have a pretty good loading speed
