I always work with the WPBakery Page Builder only and disable Gutenberg The first question is: do I really need the “Baumann Gutenberg Blocks“ plugin?
If you are planning to use WPBakery you can ignore Bauman Gutenberg Blocks. But you should use the child provided in the main archive that provides compatibility between basic WPBakery elements and AJAX page transitions.
You can add any widgets you like in the wordpress admin widgets area. If you have difficulties, plz send us wp admin access.

My question is not a problem, just for me in case of a better untestanding. If I like to change e.g. a portfolio post the settings looks not like I tought how it might look :-) Pls don't misunderstood but I think that it must looks like in the screenshot in the 2nd row. E.g. the custom slider I include later.
The demo content you have imported and it is available in the main archive has been built with Gutenberg, not WPBakery, that's why you see the shortcodes/content as plain text
And I think these are my last two questions. Before I start searching can you pls tell me where I can find the color settings for the main Black/White setting. I mean in which CSS.
if you open /js/scripts.js you will see between lines 263-297 the lines referring to background colors - and other elements for light content and dark content:
so you can see the actual colors are #141414 and #ffffff
Portfolio slug: you can go to customizer -> portfolio settings to change the custom slug. Just enter your own and after saving the changes go to Settings -> Permalinks and press 'Save' to refresh them.
In order to completely remove it you may want to use a plugin:

Meanwhile ... I worked with a lot of WP themes but the Baumann theme is really one of the best.
